Cassava Puffs
Cassava, or yuca, is a starchy tuber vegetable. Like a potato, only starchier. It’s available pre-cooked and frozen in most supermarkets, which makes life infinitely easier as the uncooked version looks like a thick tree branch surrounded by deep brown bark. This dish is an excellent alternative to salty, carb-y bar snacks that contain gluten.

Directions
Preheat oven to 400˚ F.
In a large bowl, mix together all of the ingredients to form a paste.
Rub some olive oil on your hands and form little 1 inch balls and place them on a lined baking sheet.
Bake until golden brown and crisp, about 20 minutes. Serve hot.
